Ayr\u0131ca devletin \u00e7ift\u00e7iye deste\u011finin eksik kalmas\u0131 ve \u00e7ift\u00e7inin de h\u0131zl\u0131 ve fazla \u00fcretim i\u00e7in tar\u0131msal ila\u00e7lara y\u00f6nelmesi, halk sa\u011fl\u0131\u011f\u0131n\u0131 bozan bir di\u011fer neden.<\/p>\n\n\n\n<p>2014 y\u0131l\u0131ndan beri \u00e7al\u0131\u015fmalar\u0131n\u0131 s\u00fcrd\u00fcren ve kapal\u0131, kontrol edilebilir bir tar\u0131m\u0131 m\u00fcmk\u00fcn k\u0131lan Plant Factory projesi ise geli\u015ftirdi\u011fi teknolojilerle topraks\u0131z ve ila\u00e7s\u0131z bir tar\u0131m vadediyor.&nbsp;<\/p>\n\n\n\n<p>Veri odakl\u0131 analizlerle bitki kalitesini kontrol alt\u0131nda tutan bir \u00fcretim modeli sunan proje; su, \u0131\u015f\u0131k, nem, s\u0131cakl\u0131k, r\u00fczgar gibi \u00e7evresel fakt\u00f6rleri \u00fcretimin en verimli, temiz ve sa\u011fl\u0131kl\u0131 olaca\u011f\u0131 \u015fekilde y\u00f6netiyor. N\u00fcfusun yo\u011fun oldu\u011fu \u015fehirlerde \u00fcretimi m\u00fcmk\u00fcn k\u0131larken; y\u0131l boyu y\u00fczde 95 daha az su&nbsp;t\u00fcketimi ve metrekare ba\u015f\u0131na 20 kat daha fazla verimlilikle \u00fcretim sa\u011fl\u0131yor.<\/p>\n\n\n\n<p>Geleneksel tar\u0131m\u0131n; su kaynaklar\u0131n\u0131n yakla\u015f\u0131k y\u00fczde 70\u2019ini kullanmas\u0131 ve su kirlili\u011fine yol a\u00e7mas\u0131, topraktaki yararl\u0131 mikroorganizmalar\u0131 azaltan tar\u0131m ila\u00e7lar\u0131n\u0131n a\u015f\u0131r\u0131 kullan\u0131m\u0131, toksisitenin olu\u015fumu, su sondaj\u0131, toprak makineleri, tesislerdeki y\u0131kama makine ve ekipmanlar\u0131yla yo\u011fun enerji kullan\u0131lmas\u0131na ba\u011fl\u0131 olarak karbon emisyonlar\u0131n\u0131n y\u00fckselmesi gibi sorunlar, alternatif tar\u0131m y\u00f6ntemlerini gerekli k\u0131l\u0131yor.&nbsp;<\/p>\n\n\n\n<p>Ayr\u0131ca tar\u0131m sekt\u00f6r\u00fcndeki istihdam\u0131n giderek azalmas\u0131 ve mevsimlik tar\u0131m i\u015f\u00e7ilerinin ya\u015fad\u0131klar\u0131 sorunlar da ortada. Dikey tar\u0131m teknolojisi ve Plant Factory projesinde ise kapal\u0131 d\u00f6ng\u00fc sirk\u00fclasyon sistemiyle \u00fcretimde kullan\u0131lan su miktar\u0131n\u0131n, y\u00fczde 95 daha az oldu\u011fu belirtiliyor. Kapal\u0131 ve izole tesislerde tar\u0131m ilac\u0131 kullan\u0131m\u0131 s\u0131f\u0131ra indirilerek do\u011fa dostu bir tar\u0131m yap\u0131l\u0131yor. Geleneksel tar\u0131mdaki yatay arazi geni\u015fli\u011fine de ihtiya\u00e7 duyulmuyor. Topraks\u0131z ve \u015fehir i\u00e7i \u00fcretimle karbon emisyonlar\u0131 y\u00fczde 98\u2019e kadar azalt\u0131labiliyor. Ayr\u0131ca \u015fehirde bir g\u00fcnde \u00fcr\u00fcn lojisti\u011fi sa\u011flanabiliyor. Bu da taze \u00fcr\u00fcnlere h\u0131zl\u0131 bir eri\u015fim demek.&nbsp;<\/p>\n\n\n\n<p>\u0130ktisat\u00e7\u0131 Halil Be\u015fkarde\u015fler, Uzay M\u00fchendisi Ahmet G\u00fcney, End\u00fcstriyel Tasar\u0131mc\u0131 An\u0131l S\u00f6nmez ve \u0130n\u015faat m\u00fchendisi Emre Kaynar\u2019\u0131n birlikte kurdu\u011fu \u201cPlant Factory\u201d, son y\u0131llarda T\u00fcrkiye\u2019de ihracat\u0131 da k\u0131s\u0131tlayan y\u00fcksek pestisit oranlar\u0131 ve salmonella gibi bakteriler ve sa\u011fl\u0131\u011fa zararl\u0131 durumlara kar\u015f\u0131 g\u0131da g\u00fcvencesi de sa\u011fl\u0131yor.&nbsp;<\/p>\n\n\n\n<p>Proje sahipleri g\u0131da maliyetlerinin d\u00fc\u015f\u00fcr\u00fclece\u011fini de iddia ediyor. Plant Factory\u2019de yer alan PF001 tesisi, \u0130stanbul Anadolu yakas\u0131nda \u00fcretim ve Ar-Ge merkezi olarak kullan\u0131l\u0131yor. Bu tesis, haftal\u0131k hasad\u0131yla yakla\u015f\u0131k be\u015f bin \u00fcr\u00fcn \u00fcretme kapasiteli. PF002 tesisinin y\u0131ll\u0131k \u00fcretim kapasitesi ise 900 bin adet. D\u00fcnyada ve T\u00fcrkiye\u2019de yeni yeni geli\u015fmekte olan bu sekt\u00f6r, ayn\u0131 zamanda&nbsp;yo\u011fun bir Ar-Ge bariyerine de sahip\u201d s\u00f6zleriyle anlatt\u0131.&nbsp;<\/p>\n\n\n\n<p>\u201cAsl\u0131nda \u2018Bitki Fabrikas\u0131\u2019 ismi tam da vizyonumuzu yans\u0131t\u0131yor\u201d diyen Be\u015fkarde\u015fler&nbsp;ama\u00e7lar\u0131n\u0131, \u201c\u015eehirlerin i\u00e7erisine kurulacak fabrikalarda \u00fcretilen, ila\u00e7s\u0131z, besin de\u011feri y\u00fcksek \u00fcr\u00fcnlerin \u00e7ok k\u0131sa lojistik operasyonlarla taptaze teslim edilmesi\u201d diyerek a\u00e7\u0131klad\u0131.<\/p>\n\n\n\n<p>T\u00fcrkiye\u2019de bir start-up olman\u0131n ba\u015fl\u0131 ba\u015f\u0131na bir zorluk oldu\u011funu belirten Be\u015fkarde\u015fler, ya\u015fad\u0131klar\u0131 problemleri \u015f\u00f6yle dile getirdi:<\/p>\n\n\n\n<p>\u201cYat\u0131r\u0131m mant\u0131\u011f\u0131n\u0131n oturmad\u0131\u011f\u0131, exit senaryolar\u0131n\u0131n \u00e7ok s\u0131n\u0131rl\u0131 oldu\u011fu ve bizimle ilgili alanda devlet te\u015fviklerinin neredeyse bulunmad\u0131\u011f\u0131 bir s\u00fcre\u00e7te, her a\u015famada b\u00fcy\u00fck sorunlarla kar\u015f\u0131la\u015ft\u0131k. Kurlar\u0131n s\u00fcrekli y\u00fckseldi\u011fi, y\u00fcksek enflasyon sebebiyle s\u00fcrekli hammadde maliyetlerinin artt\u0131\u011f\u0131 bir d\u00f6nemde ya\u015famak zorluklar\u0131 da beraberinde getiriyor.\u201d<\/p>\n\n\n\n<p>Hedef kitlelerinin, son t\u00fcketiciler ve kar\u015f\u0131lar\u0131nda kurumsal bir muhatap arayan Horeca kanal\u0131 (toplu t\u00fcketim yapan i\u015fletmelerin olu\u015fturdu\u011fu pazar\u0131)m\u00fc\u015fterileri oldu\u011funu belirtti. Plant Factory ekibini ise \u015fu s\u00f6zlerle anlatt\u0131:<\/p>\n\n\n\n<p>\u201cEkipte \u00fc\u00e7 molek\u00fcler biyoloji uzman\u0131, bir sistem m\u00fchendisi ve bir ziraat m\u00fchendisi yer al\u0131yor. Bu uzmanlar bitki fizyolojisi, kalite analizleri, enerji-ayd\u0131nlatma sistemleri ve \u00fcretim s\u00fcre\u00e7lerinin takibinden sorumlu. Toplam 10 ki\u015filik \u00e7ekirdek ekibin yan\u0131 s\u0131ra \u00fcretim tesisinde 16 ki\u015filik operasyon ekibi \u00e7al\u0131\u015f\u0131yor.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>\u201c\u0130la\u00e7s\u0131z ve sa\u011fl\u0131kl\u0131 g\u0131daya eri\u015fim sa\u011flamak istiyoruz\u201d<\/strong><\/h2>\n\n\n\n<p>\u0130ki bu\u00e7uk y\u0131ll\u0131k Ar-Ge d\u00f6neminin ard\u0131ndan 2023 y\u0131l\u0131nda \u0130stinye Park\u2019ta ilk sanayi \u00f6l\u00e7ekli tesislerini faaliyete ge\u00e7irdiklerini belirten Be\u015fkarde\u015fler, Gebze Teknik \u00dcniversitesi (GT\u00dc) ile y\u00fcr\u00fct\u00fclen ortak projelerde de fonksiyonel g\u0131dalar ve besin i\u00e7eri\u011fi modifikasyonu \u00fczerine \u00e7al\u0131\u015fmalar\u0131n devam etti\u011fini s\u00f6yledi.<\/p>\n\n\n\n<p>Halil Be\u015fkarde\u015fler, en b\u00fcy\u00fck hedeflerini ise \u015fu s\u00f6zlerle dile getirdi:<\/p>\n\n\n\n<p>\u201cSistemlerimizde \u00fcretimi m\u00fcmk\u00fcn olan t\u00fcm \u00fcr\u00fcn gruplar\u0131n\u0131, y\u00fcksek hacimli bir \u00fcretim d\u00f6ng\u00fcs\u00fc ile \u00fcretmek ve toplumumuzun, en d\u00fc\u015f\u00fck gelir grubu dahil ila\u00e7s\u0131z ve sa\u011fl\u0131kl\u0131 \u00fcr\u00fcnlerimize eri\u015fimini sa\u011flamak istiyoruz. \u0130kinci hedefimiz ise firmam\u0131z\u0131 global arenaya ta\u015f\u0131mak ve \u00fclkemizi kapal\u0131 alanda, topraks\u0131z, dikey tar\u0131m teknolojileri konusunda oyun kurucu hale getirmek.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>\u201cY\u00fczde 95\u2019e varan su tasarrufu elde ediliyor\u201d<\/strong><\/h2>\n\n\n\n<p>Plant Factory\u2019de Ar-Ge m\u00fchendisi olan Nadide Ezgi Ayd\u00f6ner \u00d6zbilek projede kapal\u0131 devre su sirk\u00fclasyonu, topraks\u0131z tar\u0131m, dikey \u00e7ok katmanl\u0131 \u00fcretim, tam iklim kontrol\u00fc ve sens\u00f6r tabanl\u0131 otomasyon teknolojilerini bir arada kulland\u0131klar\u0131n\u0131 aktard\u0131. \u00d6zbilek, \u201cBu sistem, bitkinin sadece ihtiya\u00e7 duydu\u011fu kadar su ve besini t\u00fcketmesini sa\u011fl\u0131yor. B\u00f6ylece geleneksel tar\u0131ma k\u0131yasla y\u00fczde 95\u2019e varan su tasarrufu elde ediliyor. Tamamen kapal\u0131 ortamda ger\u00e7ekle\u015ftirilen \u00fcretimle pestisit ihtiyac\u0131 ortadan kalk\u0131yor, mevsimsel ba\u011f\u0131ml\u0131l\u0131k sona eriyor ve y\u0131l\u0131n her d\u00f6neminde ayn\u0131 kalitede \u00fcr\u00fcn yeti\u015ftirilebiliyor\u201d dedi.<\/p>\n\n\n\n<p>Bitkinin tad\u0131 veya aromas\u0131na genetik bir m\u00fcdahalede bulunmad\u0131klar\u0131n\u0131 belirtirken, \u201cKontroll\u00fc \u00e7evresel ko\u015fullar sayesinde bitkiler, kendi do\u011fal aromatik bile\u015fenlerini optimum d\u00fczeyde \u00fcretebiliyor. Bu da tat, koku ve doku a\u00e7\u0131s\u0131ndan fark yarat\u0131yor\u201d diye konu\u015ftu.&nbsp;<\/p>\n\n\n\n<p>Kapal\u0131 ortam\u0131n, bitkilerin ba\u011f\u0131\u015f\u0131kl\u0131\u011f\u0131n\u0131 olumsuz etkilemedi\u011fini payla\u015f\u0131p, hidroponik ve dikey tar\u0131m sistemlerinin bitkinin geneti\u011fini de\u011fi\u015ftirmedi\u011fini ve bu \u00fcretim modelinin sadece daha temiz, kontroll\u00fc ve verimli bir ortam sa\u011flad\u0131\u011f\u0131n\u0131 kaydetti. \u00d6zbilek, verim i\u00e7in her t\u00fcr\u00fcn b\u00fcy\u00fcme d\u00f6ng\u00fcs\u00fcn\u00fcn dikkatle analiz edilip, \u00e7evresel fakt\u00f6rlerin buna g\u00f6re optimize edildi\u011fini de aktar\u0131rken, \u201cAr-Ge \u00e7al\u0131\u015fmalar\u0131m\u0131z hem daha k\u0131sa \u00fcretim s\u00fcresi hem de birim ba\u015f\u0131na daha d\u00fc\u015f\u00fck enerji ve su t\u00fcketimi hedefiyle y\u00fcr\u00fct\u00fcl\u00fcyor\u201d dedi.<\/p>\n\n\n\n<p>\u00d6zbilek, bu teknolojinin gelecekte bitkisel \u00fcr\u00fcnlerin \u201ciste\u011fe g\u00f6re\u201d tasarlanmas\u0131n\u0131 m\u00fcmk\u00fcn k\u0131ld\u0131\u011f\u0131n\u0131 payla\u015f\u0131rken \u015funlar\u0131 s\u00f6yledi:<\/p>\n\n\n\n<p>\u201cDikey tar\u0131m ve kontroll\u00fc ortam teknolojileri, bitkilerin b\u00fcy\u00fcme ko\u015fullar\u0131n\u0131 hassas bi\u00e7imde y\u00f6netmeye olanak tan\u0131d\u0131\u011f\u0131 i\u00e7in, gelecekte \u2018iste\u011fe g\u00f6re\u2019 besin profili, tat, renk veya aromaya sahip bitkilerin yeti\u015ftirilmesini m\u00fcmk\u00fcn hale getirecek. Genetik m\u00fcdahale olmaks\u0131z\u0131n, yaln\u0131zca \u0131\u015f\u0131k spektrumu, besin i\u00e7eri\u011fi, s\u0131cakl\u0131k ve nem gibi fakt\u00f6rleri de\u011fi\u015ftirerek bitkilerin belirli metabolitleri daha fazla \u00fcretmesi sa\u011flanabiliyor.\u201d<\/p>\n\n\n\n<p>Bu yakla\u015f\u0131mla \u00f6rne\u011fin daha y\u00fcksek antioksidan i\u00e7eri\u011fine sahip fesle\u011fen, daha yo\u011fun aromal\u0131 marul veya uzun raf \u00f6m\u00fcrl\u00fc roka gibi spesifik hedeflerle \u00fcretim yap\u0131labilece\u011fini ekleyip, \u201cPlant Factory olarak biz de bu potansiyeli, fonksiyonel g\u0131dalar ve ki\u015fiye \u00f6zel beslenme \u00e7\u00f6z\u00fcmleri alan\u0131nda gelece\u011fin tar\u0131m vizyonu olarak g\u00f6r\u00fcyoruz\u201d dedi.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>\u201cY\u0131l boyu \u00fcretim, g\u0131da g\u00fcvenli\u011fine somut \u00e7\u00f6z\u00fcm\u201d<\/strong><\/h2>\n\n\n\n<p>Plant Factory\u2019de \u00fcretim m\u00fchendisi olan Emir Taha Selman, mevcutta marul \u00e7e\u015fitleri, paz\u0131, lahana, fesle\u011fen gibi 20 farkl\u0131 ye\u015fil yaprakl\u0131 sebze ve taze ot yeti\u015ftirdiklerini belirtti. \u201cGT\u00dc ile y\u00fcr\u00fctt\u00fc\u011f\u00fcm\u00fcz Ar-Ge \u00e7al\u0131\u015fmalar\u0131nda ise t\u0131bbi ve aromatik bitkiler, \u00e7ilek ve domates gibi t\u00fcrlerin kapal\u0131 sistemlerde \u00fcretimi \u00fczerine \u00e7al\u0131\u015f\u0131yoruz\u201d derken, dikey tar\u0131m\u0131n potansiyelini farkl\u0131 \u00fcr\u00fcnlere ta\u015f\u0131mak istediklerini kaydetti.<\/p>\n\n\n\n<p>\u00c7imlenme oranlar\u0131, ya\u015f a\u011f\u0131rl\u0131klar\u0131, mineral ve metabolit i\u00e7erikleri gibi verim ve kalite g\u00f6stergelerini d\u00fczenli olarak \u00f6l\u00e7t\u00fcklerini payla\u015fan Selman, \u00fcretim re\u00e7etelerinin geli\u015ftirilmesi ve kalite standard\u0131n\u0131n korunmas\u0131nda bu verilerden yararland\u0131klar\u0131n\u0131 ekledi. Fotosentez verimlili\u011fi i\u00e7in \u0131\u015f\u0131k yo\u011funlu\u011fu ve fotoperiyotlar\u0131 \u00f6zel olarak ayarlad\u0131klar\u0131n\u0131 s\u00f6ylerken, bunun da bitkilerin k\u0131sa s\u00fcrede olgunla\u015fmas\u0131 ve daha g\u00fc\u00e7l\u00fc aromatik bile\u015fenler \u00fcretmesini sa\u011flad\u0131\u011f\u0131ndan bahsetti. \u201cB\u00f6ylece ta\u015f\u0131ma s\u00fcresi k\u0131sal\u0131yor, fire oran\u0131 azal\u0131yor ve karbon ayak izi d\u00fc\u015f\u00fcyor.
